The main trends foreseen are the following: increase in frozen-food consumption; frozen foods will become more nutritious; ice crystals will be smaller and will grow more slowly; the problem of glass transition will be better understood and used; the frozen food chain will be controlled more effectively; wider choice and better display; e-commerce is likely to lead to expansion of home ordering and delivery.
