Résumé

Time-temperature integrators (TTIs) can provide a means to monitor the safety of fresh foods packaged in reduced-oxygen environments. The purpose of this study was to develop a framework for establishing performance targets for TTIs with foods that have potential to cause foodborne botulism. An Arrhenius-type curve was developed, offering safety margins that satisfy regulatory and shelf life requirements. TTIs developed as specified should minimize "false unsafe" readings that lead to destruction of safe products. The approach could be used to establish guidelines for application of TTIs to food safety verification.
