Résumé

Pre-cut, prepackaged green bell pepper and carrot cubes were followed during storage at various temperatures both by plate counting and conductance measurements with a RABIT instrument. Comparison of aerobic viable cell counts and conductance curves at 30 deg C incubation temperature showed that, under defined experimental conditions and the given range of storage temperatures, the log viable cell counts of the pre-cut vegetables (lg CFU/g) could be correlated well. Further studies are started to check reproducibility of the mathematical model, the validity of the general function for other pre-cut, chilled vegetables, and the possibility of shelf-life prediction.
