This book summarises the work of the Concerted Action "Shelf-life prediction for improved safety and quality of foods" funded by the European Union under the COPERNICUS programme (project number: CIPA-CT94-0120). The action covered a three year period to January 31st, 1998, and involved over 40 partners from 13 countries.
