Résumé

Water content, diffusivity and sorption isotherms have been measured on samples of subcutaneous adipose tissue (SAT) removed from beef animals immediately after slaughter. Water content varied significantly with animal condition as well as with the location on the animal. The diffusivity was of the same order as that previously measured for lean meat, and was related to water content. Slabs of mutton approximately 2 cm thick and with intact SAT layers were cooled in a wind tunnel and the evaporative weight loss compared to lean samples of similar thickness. Evaporation from the SAT covered slabs was as low as half that from the lean slabs, the reduction being attributable to low water content gradients in the SAT.
