Résumé

On the basis of principle of good productive practice and hygienic as well as legal regulations the influence of freezing and storage conditions on quality of frozen meat was analyzed. The use of cryogenic and new impingement method can assure the high quality and microbiological conditions as well as appropriate prolongation of storage period of frozen meat, which is limited by physical and chemical changes as well. The suitable hygiene during production, transportation and distribution of frozen meat is also condition for maintain of its high quality.
