Summary

The air in a store directly influences the heat and mass exchange processes between flowing air and stored produce. A mathematical model helps investigate the behaviour of the produce in bulk storage under changing climate conditions throughout the storage period. For each time element, the temperatures of the produce, the temperatures of the flowing air, the moisture of the produce, and the air humidity can be calculated along the height of the pile. The model can be adapted for other produce, such as peaches, melons, apples and products with spherical shapes.
