Advanced techniques to understand and improve open-fronted vertical refrigerated display cabinets.
Author(s) : FOSTER A. M., EVANS J. A.
Summary
Open-fronted vertical refrigerated display cabinets are commonly used in supermarkets to display chilled food and are one of the weakest links in the chilled food chain. Maintaining food temperatures below critical values is the key to maximising high quality display life. Computational fluid dynamics (CFD) modelling is a valuable tool to rapidly provide design options to improve airflow within display cabinets. Studies were carried out to determine whether CFD could be used to rapidly identify the changes that would be required to an existing cabinet so that it would meet a higher test specification. Digital particle image velocimetry (DPIV) offers an ideal method of verifying CFD. DPIV provides non-invasive measurements and visualisation at a similar level of resolution to that from CFD. DPIV was used to map the two-dimensional flow field in a cabinet air curtain from discharge air grille to return air grille.
