Characteristics of ice slurry treated with surfactants and brine.

Summary

In this study, production characteristics of ice slurry treated with surfactants and brines have been investigated in the cases of use of vacuum production system. The effect of brine concentration was focused on. Ice particle size and super-cooling degree were measured while the brine concentration was changed. From the results, the authors can conclude that the effect of brine concentration is very small both on particle size and super-cooling degree; and a small amount of surfactants can reduce ice particle size compared with results of brine systems without surfactants. Then, the paper concluded that no brine system is useful for ice slurry generated by vacuum production system from economical point of view.
