Summary

VARIOUS METHODS OF CHILLING IN PARTICULAR WATER CHILLING ARE DISCUSSED. WASHING PRIOR TO CHILLING REDUCES SURFACE BACTERIA AND IS REQUIRED BY LAW IN THE EEC. MICROBIOLOGICAL EXAMINATIONS SHOWED LITTLE BENEFIT AFTER WASHING THE CAVITY, AND 1.5 LITRES OF WATER PER BIRD WAS FOUND TO BE EXCESSIVE. THE TECHNOLOGY OF WATER CHILLING IS DISCUSSED AT SOME LENGTH, AND RESULTS ARE GIVEN FOR BOTH THROUGH FLOW AND COUNTER FLOW EO. EVAPORATIVE COOLING TECHNOLOGY HAS BEEN SUCCESSFULLY DEMONSTRATED IN THE NETHERLANDS AND DENMARK, AND A PROCESS COMBINING EVAPORATIVE COOLING PRIOR TO CONVENTIONAL AIR CHILLINGHAS BEEN EVALUATED. COOLING BY AIR BLAST AT 258 K (-15 DEG C) IS EXTENSIVELY USED IN THE USA BUT CRYOGENIC CHILLING IS SAID TO BE COSTLY. SOME COSTS IN DENMARK PER BIRD WEIGHT OF 1.2 KG ARE ALSO GIVEN BUT THESE ARE COMPLICATED BY THE COST OF WATER. G.R.S.
