Modelling and simulation of heat transfer during chilling of chicken meat.

Summary
The paper presents the results of experiments and numerical simulations made during the refrigerated processing of chicken meat. For the experiments, the following were used: a specially equipped tunnel in a laboratory and an experimental setup in a slaughterhouse. For the numerical simulation of heat transfer, the following were used: ANSYS and Bertem programmes.
