Summary
This article highlights the importance of air pollution in food hygiene and safety. Sources of air pollution are the environment, raw materials, packaging materials, equipment and employees. Staff can contribute as much as 50% to air pollution. The use of HEPA filters makes it possible to substantially reduce air pollution locally or in processing rooms. The island system and systems with laminar and turbulent airflow are described. Strategy for designing clean room technology is presented.
