Summary
Conservation of ready-to-use, minimally processed fresh heart is difficult and requires research on refrigeration and modified atmosphere to enhance shelf life. The sensory characteristics of fresh heart-of-palm were evaluated during its storage in polyethylene bags under refrigeration with and without an oxygen absorber. Texture, crispness, fibre, humidity, astringency and acridity remained acceptable until the end of the 25-day trial. Colour, appearance, sweetness and sourness remained acceptable for 14 days and deteriorated from the 18th day on.
