Summary

For the expedition, fish is stacked in an insulating boxes covert by flake ice. In order to understand the heat exchange between a solid and flake ice, cooling kinetics were carried out experimentally using 2 plates (aluminum and PVC). In parallel, a cooling experiment with flake ice was carried out on a stack of fishes in an insulated box. The temperature changes at the centre of the plates (initial temperature 20°C) as well as at the centre and the surface of some fishes (initial temperature 12°C) were measured. The first experiment (plates with known thermo-physical properties) makes it possible to study the mechanism of heat exchange between the ice and the surface of the product and to identify the heat transfer coefficient. The second one allows, on the hand, knowing the kinetics of cooling of product according to its position in the box and, on the other hand, to validate a model which predicts these kinetics. A simple equation is also proposed to estimate the weight of flake ice to chill 1kg of fishes.
