Summary
During drying the rate of limarine fell exponentially, in parallel with water loss, and stabilised when the humidity reached 15%. This deterioration was not as rapid in smaller samples. The interruption of solar drying for 1 or 2 days accelerated the reduction in linamarine and cyanhydrine contents.
