Summary

Consumers require fresh fruit of excellent quality throughout the year. Modified-atmosphere storage helps to maintain fruit quality but requires thorough control and different atmosphere conditions for each fruit, and sometimes for each variety. Software was developed for the modified-atmosphere storage of fruit. Its principles and application are described.
