Summary

The difference between freeze-tolerant and freeze-sensitive bakers' yeasts in their DNA was analysed by pulsed-field gel electrophoresis. Two strains of freeze sensitive and eight strains of freeze-tolerant bakers'yeasts were only slightly different from each other in their electrophoretic patterns of chromosomal DNA. The noteworthy difference between the freeze-tolerant and the freeze-sensitive strains was that no chromosomal DNA with a size of about 610,000-base pair was found in the freeze-tolerant bakers' yeasts.
