Summary

The authors developed a model and applied it to the prediction of growth of Listeria monocytogenes in pasteurized vanilla ice cream, and compared their model with Growth Predictor and Sym'Previus predictive microbiology software packages. The ice cream was inoculated with L. monocytogenes, then stored at 3, 5, 10 and 15°C for 36 days. The authors' model accurately predicted growth of L. monocytogenes.
