Summary
Fourier transform infrared spectroscopy detected early large increases in fluid leakage from Cucurbita pepo fruits subjected to a chilling temperature (5 deg C). Measuring fluid leakage using this spectroscopic method seems to be a promising technique to detect the early onset of chilling injury.
