THE ASPECTS OF THE PRESERVATIONOF CUCUMBER FOR FRESH MARKET DISTRIBUTION ARE REVIEWED AND DISCUSSED. THE HIGH PER-ISHABLENESS OF THIS VEGETABLE IS DUE TO THE PHYSIOLOGICAL IMPOSSIBILITY OF USING RELATIVELY LOW TEMPERATURES FOR THE PRESERVATION.
