EVISCERATED TROUTS WERE STORED AT 0 DEG C FOR 12 DAYS USING CARBON DIOXIDE, OXYGEN, NITROGEN, CARBON MONOXIDE. CHANGES IN K VALUE, 2-THIOBARBITURIC ACID VALUE, TOTAL VOLATILE NITROGEN, PH, LACTIC AND VIABLE BACTERIAL NUMBERS WERE MONITORED. THE RESULTS ARE GIVEN.
