Summary

This study was conducted with a view to establishing guidelines for consumers regarding the reheating of frankfurters following refrigerated or frozen storage. Two types of frankfurters (with or without 2% potassium lactate) were tested and potassium lactate did not exert a significant effect on the survival of Listeria monocytogenes following heating.
