Summary

The quality pomegranate is influenced by the conditions at harvest and during the storage. The most important parameter that influences is the storage temperature. This work, study the effect of this on "Mollar de Elche" pomegranate storage, which were harvested in October in two points; separated by 20 days, and stored during three months under two temperature conditions (2ºC 85% RH add 3 days at 20 ºC 65-70% RH and others one at 10 ºC 90% RH). At the end, observed it that fruits storage at low temperatures had chilling injury at three months storage. This quality defect were higher in pomegranates harvested later. Respect to skin and aryls appearance, the colour slightly increased during the storage of these fruits stored at 10 ºC.
