UNDERSTANDING OF FOULING AND CLEANING MECHANISMS IN RELATION TO HEAT EXCHANGERS AND HEAT EXCHANGE SURFACES IN CONTACT WITH MILK COMPONENTS IS REVIEWED. MATERIALS AND METHODS USED IN THE STUDY OF FOULING AND CLEANING, FROM LABORATORY TO PILOT-PLANT AND INDUSTRIAL SCALE, ARE DESCRIBED.
