Summary
The paper presents a method for computation of freezing time of tuna fish. The technique used is Neuman technique. A computer program is developed to find the freezing time for fixed thermophysical properties of tuna fish and it is a function of slab thickness. The obtained results are useful for contact plate freezer as well as for air blast freezer. The technique can be used for other foodstuff materials such as meat, chicken, etc.
