Summary

When fruits are stored in a controlled atmosphere, a high CO2 content means anaerobiose and then ethanol and acetaldehyde production, which are responsible for damage to the fruits. Atmosphere composition during storage can be adjusted according to detection of ethanol. This is called dynamic atmosphere storage.
