Greasy apples are nothing other than ripe apples.

Summary
Cultivars such as Lombarts Calville, Elstar and Jonagold seem to be particularly prone to greasiness. In a trial, Jonagold apples from several orchards picked at 4 different times were stored in ultra-low oxygen storage for 6 months, followed by holding at 20 deg C for up to 20 days. Skin greasiness started to appear after about 2 days of holding at 20 deg C. Timely harvesting, direct cooling of fruits, rapid attainment of optimal controlled-atmosphere storage conditions and a quick transfer to enclosed cold chain transport are recommended to delay ripening.
