Summary

Fruits were cold-stored (0 deg C) for up to 6 months. Early harvested fruits of Early Red One and Red Chief were characterized by high textural quality but also by a high incidence of scald and relatively high weight loss during storage. For Golden Delicious fruits it was possible to choose a harvest maturity stage most suitable for both sensory and commercial quality. The fruits also ripened slowly which allowed greater flexibility in the choice of harvesting time.
