Summary

The experiment was aimed at determining the preference for "Jonagold" and "Gala" apples in relation to the time they spent in cold storage. The flavour and texture of apples were estimated monthly during semi-consumer tests involving groups of 40 people, starting from the day when fruit were picked up to 6 months in storage. The tests were done after cold storage at 0 °C and after 7 days of shelf life at 18 °C. The results obtained indicate that there are small differences in consumer preferences for apples differing in the degree of ripeness. Although during all the tests, texture and flavour scored above average (more than 5 points on a 10 point scale), it was observed that the highest points were given to apples stored no longer than 2 months. Longer storage times resulted in a decrease in the preference for the quality parameters tested.
