Summary

In France, about 4% of the consumption of electricity in industry is used by "industrial cold". The food processing industry itself uses 57% of the electricity devoted to the production of cold. The consumption is increasing markedly, from 3 TW.h in 1990 to 4.7 TW.h in 1997 (according to Ademe, 2005). The potential for saving energy is currently assessed at 1 TW.h, that is 20% of the energy consumption, which corresponds to 100 million euros. The article expounds a survey of energy in a deep-frozen vegetable plant.
