Summary

This article sets out recent possibilities in the area of digital simulation applied to industrial environments. Various food engineering problems are dealt with using the method of Finite Elements, for instance heat transfer problems. Major progress has been made in the field of computer hardware, in terms of performance as well as cost. Similar progress therefore had to be made on calculation codes. By linking modern language, object-orientated programmation and optimization of the structures of Finite Elements codes, recent research has enabled the cost of software to be reduced in similar proportions to that of hardware.
