Summary

This paper describes the influence of storage under cooling conditions on the quality and durability of yoghurts of goat's milk produced making use of various bacterial cultures. The results obtained indicate that the kind of bacterial culture has a significant influence on the final quality of the yoghurts obtained. The results of organoleptic evaluation carried out on the yoghurts on the 1st and 15th day of storage in the temperature range of 4-6 °C showed that the yoghurts obtained using bacterial cultures YC-180 and ABT-1 did not decrease significantly and was fully accepted by the evaluating persons after two weeks of storage.
