THE RATIO OF THE DIFFERENT VOLATILE AROMA COMPONENTS MARKEDLY DEPENDS ON FERTILIZATION LEVEL. HIGH NITROGEN LEVELS RESULT, IN SOME CASES, IN THE INCREASE IN AROMATIC COMPONENTS, THE SIGNIFICANCE OF WHICH FOR THE WHOLE AROMA IS NOT DETERMINED. THE EFFECT WAS DETERMINED OF DIFFERENT FERTILIZATION LEVELS ON THE CONVERSION OF AROMATIC COMPONENTS DURING COLD STORAGE (WITH THE SAME TEMPERATURES, AIR VELOCITY AND HUMIDITY). HIGH NITROGEN AMOUNTS RESULT IN EARLIER AND GREATER CHANGES IN THE AROMATIC SUBSTANCES OF FRUIT.
