Summary
This study is claimed to be the first to demonstrate that the tolerance of coffee seeds to liquid nitrogen exposure depends on the quality of the seeds and the method used to rewarm the seeds. The optimal procedure emerging from this study involves seed drying under conditions of 81% relative humidity and rapid rewarming following exposure to liquid nitrogen (37°C for 30 min. using a water bath).
