Summary

Experimental equipment and methods used by the authors, both at laboratory and pilot-plant level, for the quick production of high-quality vinegar. Determination of the optimum operating conditions: the use of an air recycling system makes possible to reduce volatile component losses (alcohol, acetic acid, ethyl acetate) and reach a fermentation efficiency of 100% in laboratory and 99% in the pilot plant; the use of 4 air diffusers instead of one did not produce any improvement when agitation was sufficient.
