Summary

This document describes studies performed on piñones during refrigerated storage with or without application of controlled atmospheres, with or without modified-atmosphere packaging. Quality is evaluated using humidity, total sugar, reducing sugar and tannin assays. Optimal treatments were: controlled atmosphere 20-5 at a temperature of 0 °C and modified-atmosphere packaging also at a temperature of 0 °C. The shelf life achieved was 7 months.
