The author describes how potatoes are stored. After reviewing the problems of respiration, transpiration, germination, and the diseases likely to occur during storage, he describes the construction of a building for potato storage, its thermal insulation, the ventilation systems and the potential cooling methods. Finally, a chapter deals how to go about actually storing potatoes.
