Summary

The engineering design of food processes and equipment requires knowledge of the basic physicochemical and engineering properties of food materials. Due to the complex physical and chemical structure of foods, theoretical prediction is not possible. A computer programme was developed at the Budapest University of Technology and Economics. The property models were based on the authors' experiments, and in some cases on data published in the literature. The data were organized and processed to make them suitable for use in computer-aided design packages.
