Summary

LIPID OXIDATION IS DETERMINED BY MEASURING THE THIOBARBITURIC ACID INDEX IN THE MUSCLES AND SKIN OF FISH STORED 3 DAYS AT 278 K (5 DEG C) AND 35 DAYS AT 268 K (-5 DEG C). THE STUDY SHOWS THAT PREFERENTIAL LIPID OXIDATION IN SKIN IS DUE TO THE < AEROBIC > CONDITION OF MUSCLES. (Bibliogr. int. CDIUPA-CNRS, FR., 84-210-191449.
