Summary

THE MICROSOMAL FRACTION FROM FISH MUSCLE HAS PREVIOUSLY BEEN SHOWN TO CATALYZE THE OXIDATION OF ITS LIPID. IN THIS STUDY THE AUTHORS HAVE STUDIED THE RATE OF THE REACTION IN THE FROZEN STATE. THE RATE WAS DEPENDENT ON TEMPERATURE, DECREASING WITH DECREASING TEMPERATURE. THE SPECIFIC ACTIVITY OF THE OXIDATION DECREASED WITH INCREASING PROTEIN CONCENTRATION POSSIBLY DUE TO THE LIMITATION OF OXYGEN IN THE FROZEN SYSTEM.
