Summary
This document is a Spanish translation of IIR Bulletin reference 2000-2564. Modified atmospheres are now frequently found in the packaging of consumer items and the industry is already turning towards controlled atmospheres within refrigerated containers during the transport of produce. These technologies continue to develop and offer further opportunities for quality improvement through an extended "atmosphere chain". The article discusses the types of modified atmospheres employed, the history of this technology and discusses likely further developments.
