Summary

THE PRODUCTION OF SPINACH IS SOLD MOSTLY IN THE FROZEN CONDITION. ITS NITRATE CONTENT IS, HOWEVER, BEYOND THE RECOMMENDED LIMIT. THAT IS WHY A SPECIAL WORKING GROUP HAS BEEN CONSTITUTED TO ELABORATE A NEW AGROTECHNOLOGY OF REDUCED NITRATE SPINACH GROWING. ALREADY THE FIRST YEAR OF WORK PULLED DOWN THE NITRATE CONTENT IN THE MOST PART OF HARVESTED SPINACH BELOW THE RECOMMENDED TOP PERMISSIBLE VALUE OF 900 MILLIGRAMMES/KILOGRAMME. SPECIAL ATTENTION MUST BE PAID TO THE TRANSFORMATION OF NITRATES TO MORE DANGEROUS NITRITES, WHICH CAN OCCUR IN CASE OF INCORRECT PROCESSING PRACTICE AND BEFORE ALL BY BY FAULTS IN HOUSEHOLD HANDLING (STORAGE TIME-TEMPERATURE TOLERANCE).
