Summary

This article provides an introduction to the use of refrigeration techniques in the production of wine. Only a small part of this complex field is dealt with, but references are given to specific literature on the subject. The production of high-quality wine is nowadays only possible by means of modern refrigeration equipment, computers and PLCs in order to control the process in an optimal way. Since the 1960s, wine production has evolved from a rather small-scale process towards a sophisticated industrial process.
