Summary

Carrot shreds were stored under a continuous flow of air or 0.5 or 2% O2 (balance nitrogen) for 9 days at 5 or 15 deg C. Carrot shreds under low O2 atmosphere exhibited an increase in respiratory quotient due to a greater reduction in O2 consumption than in CO2 production, the increase being greater at 0.5% than at 2% O2 at both temperatures.
