Responses of plastic films to the varied requirements of fresh-vegetable preservation.

Les réponses apportées par les films de matières plastiques aux exigences diversifiées de la conservation des légumes frais.

Author(s) : DESSAUX C.

Summary

The right packaging (film, type and shape) can satisfy specific requirements, case by case. However, the resistance to the various transfers must not be a restriction and, thus, must not result in a detrimental confinement. A number of models have been arrived at semi-empirically, or through pure calculations, aimed at defining packaging features as well as possible (including kinetics and equilibrium of gaseous exchanges), without ever obtaining a formula which could be applied generally. The general relations established by Pierre Marcellin governing gaseous transfers when the stationary state of operation is established, are still of a great practical interest.
