Use of plastic films for maintaining the quality of asparagus.

Summary

During storage, asparagus seems to withstand low O2 contents and relatively high CO2 contents (above 20%). With commercial macro-perforated films, it is possible to limit the weight losses without creating a modified atmosphere. Combining "normal" metabolism and high relative humidity seems to result in extensive browning. Commercial films with a low permeability are interesting for preservation at 8 deg C. However, they can result in anoxia phenomena and, more important bag swelling (CO2). Electrical microperforation of these films has made it possible to avoid such swelling by limiting CO2 accumulation, but it is still necessary to improve the perforated surface.
