Sales areas in supermarkets: a matter of climate!
Les espaces de vente dans les GMS : une affaire de climat !
Author(s) : MORAS P., BONNEVIALE L.
Type of article: Article
Summary
Fruits and vegetables are perishable produce subjected to a fluctuating environment. Ctifl monitored the physical conditions of produce sales in supermarkets. Cartographic observations show a climatic environment that is not optimal for the preservation of produce. Simulation of the behaviour of lettuce or strawberry, for instance, under adapted temperature/humidity/packaging shows that the visual quality and shelf life can be improved considerably. A retail floor layout was developed indicating optimised climatic areas.
