Summary
Three commercial time-temperature indicator (TTI) tags were tested for this purpose. Boxes of butter lettuce were subjected to various temperature regimens. A TTI was placed on each box and a temperature/relative humidity recorder was placed inside. Shelf life was measured and the TTI estimates were compared. One TTI was suitable for predicting potential shelf life under laboratory and commercial shipping conditions.
