Summary

A bacteriocin, enterocin AS-48, was tested for efficacy in fruit and vegetable juices. Juices were obtained from cabbage, cauliflower lettuce green beans, celery, avocado, orange, apple, grapefruit, pear, pineapple and kiwi. This bacteriocin was stable for at least is days at 4°C, but tended to be inactivated at 15 and 28°C; among bacteria investigated: Listeria monocytogenes CECT 4032, Bacillus cereus LWL1 Staphylococcus aureus CECT 976.
