Summary
The paper reviews the notion of transfer coefficient at the air-solid interface, emphasises the contradictions of literature and studies in particular the effect of free stream turbulence which is often neglected in chemical and food engineering. The notion of transfer coefficient hides the complixity of the flow phenomena. Not taking into account turbulence intensity which value is high in industrial flows (10 to 60%) could lead to underestimation of transfer coefficients of 30 to 150%.
